Easy freezer cake food waste recipe

Thank me later, the next time you bake, make an extra portion and freeze it. So when your craving cake simply defrost and bake. Game changer!!

Ingredients:
-1 mashed ripened banana
-2 tbsp coconut sugar / brown sugar
-2 tbsp olive oil
-1/4 cup milk I used oat milk
-1 egg /flex egg substitute
-3/4 cup self-raising flour @carrs_flour
-1/2 tsp baking powder
-chocolate chips
-1 tsp cinnamon (optional)

Method
-In a bowl mash banana,
-Add all ingredients into a bowl and whisk well.
-Either bake or add to a zip lock bag, I used zip lock bag. Freeze for up to a month.
-Defrost in the fridge, a few hours.
-Line a smaller loaf pan
-Preheat oven 180c, bake for 5 minutes then drop 170c for 20 minutes. Check with a skewer until clean.
-Leave to cool for 5 minutes, slice and enjoy!
