Tangy Marmalade Loaf

500g Carr's Strong White Flour
1½ tbsp Skimmed Milk Powder
1½ tsp Salt
25g Butter (cubed)
1 tsp Fast Action Dried Yeast
2 tbsp good quality Marmalade
1 Orange (zest and juice)
230ml Water
METHOD

 BY HAND

1. Mix together the flour, skimmed milk powder and salt.

2. Rub in the butter and then stir in the marmalade, orange zest and juice of one orange.

3. Sprinkle in the yeast. Gradually mix in the water to make a soft dough. It will be very sticky at first, but will take up all the flour and become a soft dough.

4. Knead well on a lightly floured surface for about 10 minutes until smooth and elastic. Shape the dough by hand or place in a lightly oiled bowl, cover with a clean damp tea towel to stop the dough drying out and leave in a warm place for about an hour to rise.

5. When it has risen, tip the dough onto a lightly floured surface and knead well for 3 minutes.

6. Shape by hand and place on a baking tray or place into a greased 1½ / 2lb loaf tin. Cover loosely with a damp tea towel and leave in a warm place for about 30 minutes. Uncover and bake in a preheated oven at 230°C (Fan 210°C, Gas Mark 8) for 30-35 minutes.

6. Remove loaf from oven and allow to cool before slicing and enjoying.

Try smothering with butter and more marmalade or for a treat, add chocolate spread!

 

FOR BREADMAKERS

Follow the manufacturers’ guidelines on the order of liquid/dry ingredients and set your machine to the basic/normal setting, large loaf, medium crust.

5. Uncover and bake in a preheated oven at 230°C (Fan 210°C, Gas Mark 8) for 30-35 minutes.

Remove loaf from tin and allow to cool before slicing and enjoying!
